FRUIT CRISP



Here is a great recipe for fruit crisp. I made it this weekend and it turned out really good. You can see how great it is in the picture above. My son especially liked the part where I cut up the peaches and put them in the pan. He counted each piece. The fruit can be substituted for whatever fruit you wish to put in as long as you have 2 cups of fresh or frozen fruit all together. Here's how I made it. 
Here's What You Need:
  • 1 cup of sliced frozen peaches (I cut each slice into 3 littler slices)
  • 1/2 cup fresh blueberries
  • 1/2 cup frozen raspberries
  • 2 tablespoons packed brown sugar
  • 2 1/2 tablespoons coffee
  • 2 tablespoons orange juice
  • 1 teapoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 1 cup old-fashioned oats
  • 1/4 cup black walnuts (you can use pecans, cashews, or whichever nut of your choosing)
Here's What I Did:
  1. Heat oven to 375 degrees F. Spray 8 inch square glass baking dish with cooking spray.
  2. Place peaches, blueberries and raspberries in baking dish while mixing the fruit all together. 
  3. In small bowl  stir together brown sugar, coffee, orange juice, cinnamon, sugar, ground nutmeg and ground nutmeg. Pour this over the fruit. 
  4. Put the baking dish in the oven for 15 minutes. 
  5. While baking mix the oats and black walnuts together. 
  6. Take the pan out of the oven and sprinkle the oat topping over the fruit mixture making sure to coat each piece of fruit. 
  7. Return the pan to the oven and bake for 28 to 34 minutes longer or until topping is slightly browned. 
  8. Take the pan out and serve while it is warm (vanilla ice cream would be wonderful on top).
