Espresso Cream Cake

Do you like Coffee?
Well, good because I have a great recipe for you today! Here is a recipe that you just may love! It is a recipe for Espresso Cream Cake. It yields about 16 servings. It combines chocolate and coffee together making it one light and great cake. It's a wonderful treat for those big get togethers! It does not take the oven.

Here's What You Need:
  • 4 tablespoons instant coffee granules
  • 4 tablespoons hot water
  • 2 cartons mascarpone cheese
  • 2 cups heavy whipping cream
  • 2/3 cups confectioners sugar
  • 1 big prepared angel food cake
  • 3/4 cup brewed coffee or 1 cup coffee liquer
  • 1 teapoon almond extract
  • 4 teapoons baking cocoa
Here's What You Do
  1. In a large mixing bowl, dissolve the instant coffee granules in the hot water and cool.
  2. Stir in the mascarpone cheese.
  3. In a smaller bowl, beat the cream with a fork until it begins to thicken. Do this while gradually adding confectioners' sugar and beating until little soft peaks form.
  4. Stir half of the beaten cream into the mascarpone mixture and fold in the other half of the cream.
  5. Serve the mascarpone cream with the angel food cake.
Hint: Drizzle each serving with the warm brewed coffee (or coffee liquer) mixed with some baking cocoa and the almond extract.
