Coffee Pancakes

Here is a wonderful recipe for coffee pancakes. It is a little mix of love with a little sweetness. It makes about 18 pancakes, but if you don't want to make that many... this recipe could simply be divided into 2 and make half a batter.

Here's what you'll need:
  • 1 1/2 cups flour
  • 1/2 cup white sugar
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 2 egg whites
  • 3/4 cup milk
  • 1/4 cup instant already made coffee
Here's what you'll need to make the coffee syrup:
  • 3 tablespoons butter
  • 1 tablespoon instant already made coffee
  • 1 tablespoon brown sugar
  • 2 tablespoons regular syrup
  1. Start by mixing the flour, white sugar, allspice, and cinnamon until their mixed together well.
  2. Make a well in the middle of this mixture.
  3. Take a separate bowl and whisk the coffee, milk and egg whites together until it resembles a sauce.
  4. Pour the coffee mixture into the well and stir altogether.
  5. Heat the griddle and grease with a little bit of butter or spray.
  6. Add tablespoons of the mixture to the griddle and cook each pancake until it looks slight bubbly. (approximately 1 1/2 minutes). Flip.
  7. Take these pancakes off the griddle and keep them warmed.
Coffee Syrup:
  1. Melt 1 tablespoon butter in a pan that is on low heat.
  2. Pour the brown sugar, coffee, regular syrup, and the rest of the butter in the pan and stir until all of the butter is melted.
  3. Serve the pancakes on plates while letting each person pour his or her own syrup. Enjoy!

Enjoy your coffee for all it's worth!
