Cardamom Zabaglione

How about making an italian dessert that it just right for your sweet tooth, uses cardamom, and is decorated just right for a day like today? Well, I have just the recipe for you.

Here's what you need:
  • 1/8 cup ground cardamom for great sweetness (the fresher the sweeter)
  • 4 tablespoons of golden caster sugar
  • 8 egg yolks
  • 2 tablespoons of your favorite stronger brewed coffee
  • 1/4 cup Kahlua
  • some coffee beans to decorate with
  1. Crack the eggs and put the yolks, caster sugar, and cardamom in a large bowl.
  2. Whisk by hand or with an electric hand whisk for 4-5 fast minutes with hand or 1-2 minutes by machine
  3. Whisk the liquer and the coffee in
  4. Place your bowl over a saucepan that has water in it which is almost boiling be careful of the hot water spashing out
  5. Whisk for about 15 minutes by hand turn down the stove when the water is about to boil (boiling = curdling)
  6. Stop wait for 30 seconds in order for it to get thicker
  7. Continue whisking until the mixture is fluffy and very thick
  8. Remove from heat, turn off the stove, and pour the Zabaglione mixture into 4 glasses or mugs that are mildly warm
  9. Sprinkle with the coffee beans (you coul crush them up or just slice them in half)
  10. Serve immediately
Enjoy the Zabaglione mixture! Sorry for how many steps it is, but I tried to cut the steps up to make it easier to make and this works great when trying to avoid overtasking in the kitchen.

Enjoy the Tuscany way for all it's worth!
